Chicken Stuffing Casserole Dish

Ordy's sister taught me this, and it's such a great idea for a potluck or last minute meal! I have tried it once with frozen chicken I boiled, and once with rotisserie chicken. I like the 1st option for cost purposes, but the 2nd for time purposes!

Ingredients
  • 2 rotisserie chickens (white meat) 
  • 1 stick of butter*
  • 1 can of cream of chicken soup
  • 1 can of cream of mushroom soup
  • 1 cup of chicken broth
  • 1 box of stove top stuffing*
*in my second casserole, I double the stuffing so it was less "soupy" so the stuffing would absorb it, I liked it more when I doubled the stuffing so 2 sticks of butter and 2 boxes of stuffing for mine*

Directions
  • melt butter and mix with stuffing
  • mix soups and broth in pot and bring to a boil then put aside
  • put 1/2 of stuffing mix in bottom of casserole dish
  • put chicken on top
  • pour soup mixture over chicken
  • cover with the remaining stuffing mix
  • bake at 350 for 15-20 minutes
Easy Peasy and you're done! mmm...enjoy :)
